Lucy Day - the celebration of St. Lucia - is almost here and preparations are in full force in Norway, Sweden and Denmark because Lucy Day is the beginning of the Christmas holidays which will last for many in Scandinavian countries until January 20th - St. Knut's Day!

My friend Gill lives in Norway and although she does not have a blog, she wanted to participate in the cookie recipe exchange. Below you will find the recipe from her MIL she has shared with me.
Apparently her MIL bakes so many cookies at Christmas that they last until Easter! Then she bakes no more cookies until the next Christmas!

Bizcochitos - My Favorite Holiday Cookie (after sugar cookies of course!)

The New Mexico State Legislature voted them the New Mexico State Cookie! And once you have tasted one, you will know why!
Every person I have ever baked a batch for has begged me for more!
