Greek Salad with Shrimp Scampi! One of our most favorite summertime dinners! Light fare that is very quick and easy to prepare, and yet satisfyingly filling - and absolutely yummy! A lovely Greek family treated us to this dinner salad years ago and I taught myself to recreate it for my sweetie. I hope you will enjoy!

Winter chill is in the evening air! It's the perfect time of year to warm up with the ultimate comfort food - Shepherd's Pie! And this recipe is extra comforting because it is made with pot roast! I developed this delicious (and filling) Shepherd's Pie for Diane's Sweetie and it has become a family favorite.

I love, love, love bacon wrapped scallops and I adore risotto! And since it is spring, I am sharing a favorite spring time meal at my house - a recipe I created so I could enjoy both dishes in one!!
BACON SCALLOP RISOTTO
1/4 lb. sliced bacon - cut into about 1" pieces
1/4 cup chopped onion
4 tablespoons olive oil
1 C risotto rice

When I was a kid and my mother made these little Ribbon Sandwiches - which she did every year for the church circle Mother's Day Tea - I was in heaven when she finally pulled the chilling loaves from the fridge and sliced off the crusts.
You see - we kids got to eat the crusts and the bits of those yummy fillings still clinging to them! We weren't allowed to have any of the perfect ones because they were for the tea. But that was just fine with us. The "reject" crusts were just as good.
