Recipe: Delicious, Comforting Shepherd's Pie Made With Pot Roast.

Winter chill is in the evening air! It's the perfect time of year to warm up with the ultimate comfort food - Shepherd's Pie! And this recipe is extra comforting because it is made with pot roast! I developed this delicious (and filling) Shepherd's Pie for Diane's Sweetie and it has become a family favorite.

Bacon Scallop Risotto

I love, love, love bacon wrapped scallops and I adore risotto! And since it is spring, I am sharing a favorite spring time meal at my house - a recipe I created so I could enjoy both dishes in one!!

                 BACON SCALLOP RISOTTO

 Ingredients

1/4 lb. sliced bacon - cut into about 1" pieces

1/4 cup chopped onion

4 tablespoons olive oil

1 C risotto rice

When I was a kid and my mother made these little Ribbon Sandwiches - which she did every year for the church circle Mother's Day Tea - I was in heaven when she finally pulled the chilling loaves from the fridge and sliced off the crusts.

You see - we kids got to eat the crusts and the bits of those yummy fillings still clinging to them! We weren't allowed to have any of the perfect ones because they were for the tea. But that was just fine with us. The "reject" crusts were just as good.

Cinco de Mayo Enchiladas - Pamela Style!

I always celebrate Cinco de Mayo by setting out my much loved Mexican painted wood trays and my sweet little Mexican pottery creature colletion. 

I have several trays and quite a few birds (and one frog) - all rescued from thrift shops and garage sales over the years.  I can't bear to leave them sitting unhappily in those musty places where they are not appreciated.  I have to give them a good home!  Just HAVE to!

But before I get to that  - on the way to this post, I encountered two more delicious soups shared recently on two other blogs I follow!

Since it is January, and still cold and dark and rainy, my need for big hot bowls of lovely soup has not diminished!  So I made them both!

And we enjoyed them so much, I decided to pass them on to anyone who might have missed them!
